Freezer Filling

I had hoped to do all my freezer cooking for the month on Monday, but that didn't work out. However, I did get most of the cooking I planned done a little here and a little there all week long. It wasn't bad and I think it is really going to pay off.

Here's what I got into the freezer:
  • About 20 sandwiches (pb&j, tuna, and grilled cheese) - I made Ariel a sandwich for lunch of the type I was making that day. Then while she ate it, I made a batch for the freezer.
  • About 15 burritos (rice & beans, beef and cheese) -made the bean ones during nap time one day and the beef while I was making dinner another day
  • 4 1-qt bags of tomato sauce - I started this before dinner one evening and it simmered all evening
  • 2 dinner size batches of chicken chow mein - I made this for dinner Monday and tripled it
  • 2 small casserole dishes of mashed potatoes - made these using the crock pot today
  • About 30 meatloaf patties - made this the same evening as the beef burritos (it was a busy night)
  • About 20 corn dog muffins - made for lunch Friday and froze all the rest
  • A batch of Amanda's chicken nuggets - we had this for dinner one night and I made a double batch
  • A casserole dish of Baked Spinach Pasta - we had this for dinner Thursday and the recipe made a large casserole dish and a small one, so we ate the small one and I froze the large one for sometime when we have company
  • A bag of sloppy joe mix - made this for dinner when I was doing all the beef stuff above and since it was just Ariel and myself, we had enough left over to freeze for another dinner
  • 2 cups of cooked brown rice - I made a batch for the bean burritos and had 2 cups left over and I heard it freezes well, so I figured we'd give it a try.
I still have plans to make some fruit and veggie muffins and freeze them for quick breakfasts. Maybe I'll get some done tomorrow during nap time.

That doesn't look too bad. Our new freezer is finally getting some action. I can't wait till I get to pull out dinner from the freezer and just defrost and reheat. I'll let you know how it tastes...hopefully.
