We are eating again!! It's been a few weeks, but we were so low on groceries that I just couldn't make myself plan ahead. I went grocery shopping Friday and planned all our meals for this month, so I can start posting again.
We're trying some new things. After read a million and one blogs about once a month cooking, seeing my sister-in-law's success with it a couple of months ago, and enjoying some double batch cooking and freezing of our own...I'm gonna try a mini-cooking day for our meals this month. Today. With Jason. While watching movies of course.
It's not totally organized...at least not in a posting fashion yet. I'll let you know how it goes. Maybe.
Onto this week:
Breakfasts: cereal, yogurt, oatmeal, fruit
Lunches: sandwiches, leftovers
Dinners:
Monday- Chicken Chow Mein (ours is a slight variation of this family favorite) - hoping to triple and freeze
Tuesday- Sloppy Joes (double and freeze the mixture), mac n cheese, green beans
Wednesday- Chicken Nuggets (double and freeze), Cream Cheese Noodles, Peas
Thursday- Baked Spinach Pasta - I'll probably review this one next week.
Friday- Burritos - planning to make these today and freeze a bunch for lunches all month
Saturday- Leftovers - event at MACU so our schedule will be a little off...
Sunday- Sandwiches - ...all weekend

we do a spinach pasta bake, minus the meat, as one of our weekly vegetarian meals. i use serggento's fresh mozzarella that you have to slice instead of shredded. it made a big difference. it's tom's second favorite meal now :)
ReplyDeleteThanks for this posting. I am working on getting better about cooking in larger amounts and freezing so that there is always prepared meals in the freezer. You're doing such a great job!
