Meal Planning Monday 2/15-21 and Zucchini Crescent Pie

Wow, this month is really flying by! Crazy. But February seems to always move this way.

Breakfast - cereal, oatmeal, fruit

Lunch - leftovers (frozen and otherwise), sandwiches, soup, spaghetti o's (yep from a can)

Dinner -
Monday: chicken nuggets, scalloped potatoes, green beans, and fruit salad....and LO chocolate cake- Mom and Dad are staying for dinner this time. Nice.
Tuesday: cheesy chicken voila...frozen meal
Wednesday: VA stuff...need to think about bringing something...
Thursday: chicken parmesan over spaghetti with garlic toast - enough for our extra Woolard's too :)
Friday: Going to VA early cause Jason and I are both going to a youth event, Ariel is having a sleepover at Gram and PaPop's house
Saturday: Staying the night with my parents
Sunday: if we make it home for dinner - chicken noodle soup and grilled cheese sandwiches

I'm planning a trip to the store for these:
walmart- blueberries, yogurt, grapes, nectarines, milk
walgreens- kellogg's cereals (deal)

Recipe Review: Our Favorite!!! Zucchini Crescent Pie - My mom made this, I'm not sure where her recipe came from...

4 cups thinly sliced zucchini
1 cup chopped onions
1/2 cup margarine
1/2 cup fresh parsley (or 2 T flakes)
1/4 tsp salt, pepper, garlic powder, basil, oregano
2 eggs
8 oz shredded mozerella
1 pkg 8 crescent rolls
2 T mustard

Cook zucchini, onions, and margarine over medium in a sauce pan for 7 minutes
Stir in parsley, salt, pepper, garlic, basil, oregano and cook for 7 1/2 more minutes
While cooking - lay crescent rolls flat into sm/med casserole dish (no holes), spread mustard evenly over dough
Remove veggies from heat
Whip eggs and add cheese, stir well
Add to pot, stir well, poor into casserole dish lined with crescent rolls/mustard

Bake 18-20 (until center sets) minutes at 375. You may want to cover the crust with foil for the last 10 minutes so it doesn't burn...I have stopped doing this and have had no burning. Let cool 10 minutes. Enjoy!

We make this a lot in the summer. Now, since I have frozen zucchini we have it in the winter too!! Jason doesn't really like veggies (except green beens - you may notice we have green beans A LOT), but he likes this meal A LOT. The mustard adds good flavor. You really should try this once at least...I think it's surprisingly good. That's all I'll say about this one...I've got stuff to do! :)

  1. Wow! Chicken Parmesean.....that sounds fancy. You are so kind to include us. I read it out-loud to Chris and he said, "YUM". I agree. Do you want me to bring anything this time? Just email me. See you Thursday.

  2. It's one of our favorites...and it's not fancy, just tasty when it turns out. If you really want to bring something, a salad would give us some green veggies...or just some kind of other veggie? It's really up to you, we should have plenty to eat either way. I like getting to spend time with ya'll so frequently.
