Meal Planning Monday 3/1-8 and Biscuit-Topped Chicken Pot Pie

Breakfast: cereal, oatmeal, fruit (fresh and canned), fruit and walnut salad, bagels

Lunch: leftovers, pb&j, soup, yogurt, smoothies

Dinner:
Monday - Skyline Chili spaghetti and hot dogs and green beans
Tuesday - Jason is going to Little Washington so Ariel and I will eat frozen hoppin' john over rice maybe with a smoothie
Wednesday - Portsmouth - Ariel eats with Gram and PaPop, we'll eat at the meeting then go to small group
Thursday - Sausage and Sauteed Bell Peppers and Onions over noodles
Friday - (Trying this one again since it didn't happen last week) Chicken Nuggets, Mac n Cheese, and Peas - I'm also planning to spend the day with my sister since she has the day off
Saturday - FFY (Fend for yourself) - leftovers, freezer, cereal, ramen, etc
Sunday - Soup and Sandwiches - grilled cheese, ham, ramen, tomato soup...we have options


Last Week's Recipe: Biscuit-topped Chicken Pot Pie

This recipe is from my sister and is super quick and easy.

2 cup cubed chicken
1 cup milk
1/4 tsp pepper
2 cans cream of broccoli soup
2 cans mixed veggies
2 cans biscuits

1. preheat oven to 400 degrees
2. premix soup, veggies, milk, pepper in casserole dish
3. cook chicken and add to mixture
4. bake 20 minutes
5. cover mixture with biscuits and cook as long as biscuit package indicates

My sister places the leftover biscuits on a cookie sheet to bake with casserole. Also, sometimes she just puts the biscuits around the edge of the casserole and leaves the middle uncovered, rather than covering the whole casserole.

My changes: 
-I use different cans of mixed veggies to get more variety - one with potatoes, one with corn - don't know why they are packaged this way but its how it works in EC. I have used frozen veggies before, too.
-We don't like cream of broccoli soup very much at our house, so I use cream of celery...sometimes one of each or two of the celery or whatever I have in the house. Cream of celery is our preference.
-I usually just cook the chicken in a skillet cause it is quick.
-The whole biscuits sometimes end up a little doughy following the recipe and we don't like dough. My variation is to just use one package of biscuits and flatten them to cover the mixture. I cook as long as recommended and then watch until it is golden-brown (usually takes about 5 more minutes). Jason really prefers this style of topping.
