This week is a little healthier than last week. However, it should be rather easy. Lots of freezer foods!! I'm excited to eat from our garden this week.
Breakfast - cereal, oatmeal
Lunch - leftovers, sandwiches, soup
Dinner -
Monday: Zucchini Crescent Pie (using our summer garden frozen zucchini!!)
Tuesday: Brunswick Stew (hopefully, enough to freeze some)
Wednesday: Church Planning Meeting in VA
Thursday: Spaghetti (sauce from the freezer from tomatoes from the garden!!) and garlic bread - should be enough for Chris, Lindsey, Silas, & Savannah should they choose to join us :)
Friday: Headed to Wilson...probably dinner there or in the car (may pack sandwiches)
Saturday: Still in Wilson...
Sunday: Jason preaching & teaching at StoneybrookCC - at least lunch there...not sure how long we'll stay cause I'm sure we'll need to watch the ProBowl...maybe we'll use some McDonald's coupons on the way home
Last Week's Recipe Review: Pepsi Pot Roast
I said I was going to cook this one, but I found this one later and had to try it. Mmm...it was worth changing (though I'm sure the other is quite as mouth-watering as it suggests). With only four necessary ingredients, it was super easy to throw into the crockpot in the morning. Plus, it was my first dinner with soda in it. I have been curious for a while what a soda can do for a roast - apparently it serves as a good tenderizer. Our meat was tender. Must have worked.
I had the veggies on hand, so I added the carrots, celery and onion that are suggested as optional. I figured it would be heartier that way (and go further). We also had baked potatoes. It was the first time I actually baked them in the oven. I always just go for the quick microwave thing. I rubbed them with olive oil, tossed a little sea salt on 'em, and let them bake on the rack for about 1hr15min. They were great. Since I added the veggies to the roast, I skipped the green beans this time.
We had plenty for our dinner the night I made it, enough to serve over rice with green beans on Thursday, and I was able to freeze a good portion for a future meal. Jason and I both really enjoyed it both time we ate it. Ariel was not a fan. She isn't much of a fan of anything lately. Our wonderful eater has decided she is picky and stubborn. I'm hoping this is a passing stage, but I'm doubtful. At least there are a few things she'll still eat relatively regularly.
I'll definitely make this again! You should try it.

YUM!! Your roast dinner sounds delicious! Good idea with the sea salt on the potatoes. I'm making baked potatoes for dinner one night this week. I know I've got some sea salt somewhere around here. I just may have to try to roast too. My husband is a weird man and isn't all about meat & potatoes, but I am! :) He just has to deal with it occasionally. Thanks, Teri!
ReplyDeleteAs far as I know we're coming. :-) Chris and Aaron mentioned something about getting together with them for supper but I have no idea if that is happening. Chris is supposed to check on that. We also tossed around the idea of a VA visit while we're already so close. Not sure what we'll do.
