April Freezer Food Review

Last month I made use of our freezer for our meals. I was really excited about it and I have to say I think it was a success.

I wanted to reflect a little my recipe/food choices though.
  • Sandwiches - The grilled cheese were great out of the freezer. I took them out of the freezer and grilled them. No defrosting involved. The results were amazing. Much more evenly browned with frozen bread. The tuna was pretty good. The ones that I used miracle whip on were best (because I read that it holds up better in the freezer). I let some thaw in the fridge overnight, then toasted. Others I toasted in the toaster oven. These were the first Ariel ever seemed to enjoy. The pb&j was handy. I learned to always put peanut butter on both sides with jelly in the middle and make sure the bread doesn't get soggy. Soggy sandwich bread is GROSS.
  • Burritos - We will make these again! Ariel and I thoroughly enjoyed the bean burritos. Husband has no use for beans. We all loved the beef though. I may add more cheese to both kinds and more seasoning for the bean next time.
  • Tomato Sauce - We only ate one of these. It was too long ago for me to remember my impression. Oops.
  • Chicken Chow Mein - Not new. Always great.
  • Mashed Potatoes - Good. Tastey. Nothing to write home about, but convenient for a hurried meal. Next time I'll freeze in smaller containers.
  • Meatloaf Patties - We will have these again. I'm gonna try to change it a little next time for less onioniness.... Jason wants a new name for them cause apparently "meatloaf" is a bad word.
  • Corndog Muffins - I didn't like this recipe. The concept was intriguing, but the bread was WAY too dry for me. May try again with a different recipe...or not.
  • Amanda's Chicken Nuggets - LOVE them. We just might always have a batch of these in the freezer. Five stars. Easy and tastey and freeze well.
  • Baked Spinach Pasta - Ay may zing. It was great. We will have this over and over again. Healthy and everyone loved it. One batch of the called for recipe makes enough for three dinner for our family of three.
  • Sloppy Jo Mix - Not new either, but reheated well out of the freezer. Yummy for all.
  • Brown Rice - I was curious about how this would do from the freezer. It was fine. I'll probably only freeze if I have leftovers in the future.
  • Muffins - This was an afterthought and didn't make it into the post before. However, they were great. We will probably always have some kind of fruit muffins in the freezer. I made blueberry muffins, strawberry muffins, and cherry almond muffins. They were great, especially heated in the toaster oven (either thawed or straight from the freezer).
  • Sugar Cookies - Another afterthough, but totally worthwhile. I didn't make a lot though. I formed the dough into balls using an icecream scoop, froze on a cookie sheet overnight, and loaded them into a plastic container in the freezer. Now we take out a few after dinner is finished to cook while we eat. Makes for a tastey dessert and we don't eat more than we need. (Though I have been guilty of stopping by the freezer to pop a frozen ball of cookie dough into my mouth occassionally.)
Freezer cooking was a success for us!
